Near-Infrared Spectroscopy (NIRS) enables the determination of quantitative parameters related to the chemical composition of the analyzed sample. The best way to achieve high-quality results is to follow the recent guidelines published by UNI, which will be presented during this presentation (UNI/TS 11892:2022). 
Furthermore, we will demonstrate the application of NIR spectroscopy for butter analysis. In fact, European regulations specify minimum fat and maximum dry matter and water content for butter, which must be constantly monitored. NIR process instrumentation has proven to accurately measure these parameters both at-line and on-line in production lines, reducing time and costs.
